We are excited to welcome Felix Ellwanger, a visiting student from the Karlsruhe Institute of Process Engineering in Life Sciences, Food Process Engineering. Under the supervision of PD Dr.-Ing. M. Azad Emin and Prof. Dr.-Ing. Heike P. Karbstein, Felix is working on a intriguing project focused on meat substitute products, such as vegan chicken chunks, produced using the twin-screw extrusion process. The project aims to understand how protein-water mixtures flow through the extruder and the mechanical and thermal stresses they encounter. This requires detailed information about the rheological behavior of these mixtures.

During his stay at Chalmers, Felix aims to gain insights into the stationary shear viscosity, flow instabilities, and wall slip effects, contributing valuable knowledge to the field of food process engineering.
